Fluffy Vegan Banana Pancakes

Makes 12 pancakes

Ingredients

1 large banana
2 tbsp caster sugar
1/4 tsp salt
2 tbsp vegetable oil
120 g self-raising flour
1/2 tsp baking powder
150 ml plant base milk (Oat Milk)
Syrup, sliced banana, and other fruit, to serve

Method

Begin by mashing the banana in a mixing bowl. Next, stir in the sugar, salt, and oil. After that, add the flour and baking powder and mix everything thoroughly. Then, make a well in the center and gradually whisk in the milk. The batter should have a thick and droppable consistency.

Heat a little oil in a frying pan over medium heat to make American-style pancakes. Add 2 tablespoons of the batter to the pan to make each pancake. You should be able to make about 4-5 pancakes at a time. Fry each pancake on both sides for 2-3 minutes until golden. You can serve the pancakes with syrup, sliced bananas, and berries if you like.
