Ingredients
4 tbsp olive oil
1 onion, finely chopped
2 garlic cloves, crushed
1/4 tsp chilli flakes
2 x 400 gr cans chopped tomatoes
1 tsp caster sugar
6 tbsp mascarpone
4 skinless chicken breast, sliced
300 gr penne
70 gr cheddar, grated
50 gr grated mozzarella
1/2 small cup bunch of parsley, finely chopped
Method

Heat 2 tablespoons of oil in a pan over medium heat. Fry the onion gently for 10-12 minutes. Add the garlic and chili flakes and cook for 1 minute. Add the tomatoes and sugar, then season to taste. Simmer uncovered for 20 minutes or until the mixture has thickened. Finally, stir in the mascarpone.

Heat one tablespoon of oil in a non-stick frying pan. Season the chicken and fry for 5-7 minutes or until it is cooked through.

Preheat the oven to 220°C/200°C fan/gas mark 7. Cook the penne as per the instructions on the packet. Drain the pasta and toss it with the remaining oil. Transfer the pasta to a medium-sized ovenproof dish. Stir in the chicken and pour the sauce over it. Sprinkle the cheddar, mozzarella, and parsley on top. Bake for 20 minutes or until it turns golden brown and starts bubbling.
